Lemony almond cookies

My three year old is an extremely picky eater. Sometimes, when there is something she does eat and enjoys, we will ask her if it is ’a bit good’ or ‘really’ good. I can count on my one hand the amount of times she said ‘really good’. Well,these cookies got a ’really good’, and- bonus, they are sugarfree.
Ingredients:
2 tbl coconut oil
A few drops of stevia or 1 tbl granulated
1 tbl vanilla
2 tbl lemon zest
1 3/4 cup almond neal
One egg Handful of chia seeds
Method:
Combine the oil, stevia, vanilla, lemon zest and egg. Add the almond meal and chia seeds.
Roll into balls and press into a cookie with a fork. Bake in the oven at 180 for about 15 minutes.
It is not essential, but I made a topping of the Banoffee tarts’ filling, or if making from scratcg, combine half a banana, one teaspoon of coconut oil, one tablespoon coconut milk and a handful of cashews.
