Banoffee tarts

This is unbelievably easy to make and a great idea for a dinner party!

You will need a good blender but my Nutribullet worked fine! I always try to budget in the beginning of the month to buy almonds, cashews, dates and coconut oil in bulk, it might seem like a lot then but it saves a lot in the long run.


Serves 4-6


Ingredients:


Base:


One cup dates

One cup almonds

1/2 teaspoon sea salt

Half a cup or so of water (otherwise your blender will burn out)


Filling:


One cup cashews

one teaspoon cinnamon powder

1/4 cup coconut milk

1 banana

1 tbsp coconut oil

a few drops of stevia

(keep a few cashews apart to sprinkle on top)


Method:


Line a muffin tray with paper cases. Blend the base ingredients and divide it, form it in a little bowl and put the tray in the freezer while you make the filling.

Blend the filling and spoon it into the little bowls or domes. Sprinkle with nuts and place back in the freezer.
